RECIPE: CAULIFLOWER PIZZA
FOR CAULIFLOWER PIZZA (makes 1 individual pizza)
- 1 package of Trader Joes Riced Cauiflower
- 1 egg beaten
- 1 teaspoon dried oregano
- pinch of salt
- 1/3 cup of goat cheese or Daiya Mozzarella Shreds
- 1 piece of parchment paper
- 1 clean dish towel
FOR SAUCE (made in the Nutribullet)
- 3 medium Roma Tomatoes chopped
- 1/4 cup onion chopped
- 1/3 cup carrot chopped
- 1 tablespoon of tomato paste
- 1 small garlic clove peeled
- 1/4 teaspoon of dried basil
- 1/4 teaspoon of fresh lemon juice
- 1/4 teaspoon brown sugar
- pinch of salt
- 1/2 cup of water
FOR TOMATO SAUCE: (COOKING TIME 35-40 MINUTES)
Place all ingredients into a Nutribullet or blender and blend for about 20 seconds. Pour into a saucepan. Simmer for 35-40 minutes. Pour over cauliflower pizza. Feel free to save some in a mason jar too for other meals throughout the week!
FOR CAULIFLOWER PIZZA: (COOKING TIME 45 MINUTES)
Preheat the oven to 400 degrees. Fill a large pot with enough water to cover the package of cauliflower rice. Bring to a boil. Dump the cauliflower rice into the pot and cover. Let cook for 4-5 minutes. Drain into a strainer.
Dump the cauliflower rice onto a clean dish towel. Let it sit and cool off for a few minutes. Then twist the towel up and squeeze any excess moisture out.
In a large bowl mix the strained rice, beaten egg, cheese, and spices. I personally used a whisk then squeezed and mixed it all together using my hands.
Press the dough onto a baking sheet lined with parchment paper. Try and make sure the dough is about 1/3" thick.
BAKE for 35-40 minutes at 400 degrees.
REMOVE from oven after the 35-40 minutes are complete and add your sauce and all your favorite toppings!
Return pizza to the oven for 5-10 minutes at 400 degrees or until the cheese is melted and bubbly! Take out and slice and enjoy!
TIP: Double the recipe and after adding toppings to the finished crust WRAP in aluminum foil AND FREEZE one pizza to enjoy later in the oven on a different night!
